About the opportunity
- Fairmont is seeking a dedicated culinary professional to lead kitchen operations, ensuring exceptional food quality, consistency, and profitability while upholding the highest brand standards.
- This leadership role oversees all culinary preparation, menu planning, inventory control, and staff management to deliver luxury dining experiences and maintain rigorous hygiene and safety compliance.
Key responsibilities
- Meet budgeted food and labor costs while managing daily payroll and staff schedules based on operating forecasts.
- Plan and develop menus, establish appropriate food portions, and price menu items to ensure net profitability.
- Supervise all food preparation, cooking methods, portion sizes, garnishing, presentation, and equipment maintenance.
- Oversee the ordering of food supplies and kitchen equipment, approve products to meet quality standards, and create proper purchasing specifications.
- Hire, train, discipline, supervise, and evaluate kitchen personnel while driving colleague engagement, high morale, and minimum turnover.
- Coordinate special functions and food presentation with the Executive Chef, Food and Beverage Director, and other management staff.
- Maintain compliance with Ecosure, Forbes, and LQA standards and ensure a safe working environment.
Qualifications
- 12 to 15 years of experience in a kitchen covering all aspects of cooking, supported by very advanced administration experience.
- Reading, writing, and oral proficiency in the English language.
- High level of creativity, high quality standards, and strong leadership, communication, and training abilities.
- Food handler's certification.
- Ability to embrace the Fairmont brand promise, foster an inclusive environment, and meet physical demands including prolonged standing, walking, carrying up to 50 lbs, and exposure to extreme temperatures.
