About the opportunity
Fairmont Century Plaza is seeking a Cook to prepare base recipes for the In-Room Dining and Rooftop Pool menus. You will review the garde manger cold station mise en place daily to ensure fresh quality products.
You will assist with receiving and stowing raw products upon delivery, and be proactive in properly storing, labeling, and organizing products in venue coolers and dry storage spaces.
You will also learn the hot line to step in during colleague breaks or assist during high-volume periods.
Key responsibilities
- Prepare base recipes for the In-Room Dining and Rooftop Pool menus
- Review garde manger cold station mise en place daily for fresh quality products
- Receive and stow raw products upon delivery
- Proactively store, label, and organize products in venue coolers and dry storage spaces
- Learn the hot line to cover colleague breaks and assist during high-volume business periods
Qualifications
- Basic culinary training, whether on the job or via schooling
- One to 2 years of experience in a professional kitchen, with comfort handling a moderate volume of preparation
- Basic knife skills
- Basic knowledge of sauce preparation, protein and vegetable cookery, and garde manger cold and salad station operations
- Ability to read and follow recipes and directions to produce consistent end products
- Basic knowledge of food safety practices
- Current food handlers certificate
- Must provide proof of eligibility to be employed in the United States of America

- Hourly rate starting at $28.00 per hour per the collective bargaining agreement with UNITE HERE Local 11
- Rate increases to $32.40 per hour at 9 months
- Rate reaches full scale of $37.00 per hour at 18 months

- Location: Fairmont Century Plaza
- Compensation: $28.00 to $37.00 per hour based on the collective bargaining agreement with UNITE HERE Local 11 break-in rates for the first 18 months
